Today I made some mints!
Firstly, I took some Gharadelli Chocolate (you can use nestle, gharadelli is very expensive, I love Gharadelli the best though) Heated it up, we tried it both ways, first batch was on the stove, the second one was heated up with the microwave. I perfer the stove.
After chocolate is melted, add a dash of peppermint extract to the chocolate
Then take a round cracker and dunk it in the chocolate.
(this pic was taken when I was on the last cracker, as you can see the chocolate started drying already, you really have to do this quickly)
Line a cookie sheet with some wax paper
and place the chocolate covered crackers on the paper.
before the chocolate begins to harden, take Candy Canes
Put them in a sandwich bag, and hit them (I used the back end of an icecream scoop) into tiny little pieces
Then immediately (its good to have all this done prior to coating the crackers in chocolate) sprinkle the candy cane on top to the chocolate.
then pop the cookie sheet in the freezer for about 10 min or so. This helps the chocolate harden quickly. You can transfer them onto a pie plate, or keep them a tin in your fridge, if you happen to have some left
These are perfect for xmas, but since we had some candy canes here I just made them today You can get really creative, and purchase multi colored candy canes, etc.
