Goodbye 2008

I learned soooooo much about myself in 2008. I took trips, I fell in and out of love. I have struggled, and been on top. I got to spend valuable time with Emma. More time then I was ever able to spend (since she was a newborn) and I honestly LOVED every minute of it.

I met a few people. GREAT people. I have had my hand in alittle drama. I've taken chances.

I found answers. I can't even imagine what 2009 will hold for me. I know its going to be something big.

Some of my memories from 2008:

  • The whole summer with Emma
  • Going to Florida to see Alex
  • Also, going to New York... I had some of my best times with that man <3
  • Taking Emma to Disney. An absolute amazing experience! Never in a million years would I think Emma would have enjoyed it THAT much. She SOAKED it in, and it was the BEST trip ever.
  • Going to Branson
  • Going to the amusement park!
  • My sister and her family came to visit
  • Seeing my Friends from Indiana, having seriously the BEST week.
I had alot of questions in 2008. I lost my direction. I felt hopeless about my situation. Thankfully I finally got some answers. Now in 2009 I can just work towards my goal.

Im ready to close this book, and start the next. There aren't any chapters left to write!

Heres to 2009! May it be less stressful, and MORE memorable !

Anyways- I want one soooo bad for Emma, They are soooo cute!!

Mhmmm not bad!

We used Emma's easy bake tonight for the first time. She made Yellow Cake with Chocolate Frosting, and then a sugar cookie.

During the mixing of everything she would taste it and say, "MMM not that bad" rofl

It was seriously the funniest/cutest thing! She pretty much ate all the chocolate frosting before the cake was done but that wasn't a shock. On Fridays when we make pizza she eats half of the topping before we put them on the pizza. hahaha

Emma loved her easy bake, and I am so excited to make little mixes for her for the next time! When I get a chance I want to make up some and put them in baggies, and label it that way we will have them ready for when we get it out again!

I really want to make a pizza! I saw on a website how to make the pizza- and it is SOOO easy! Also, pies! I am excited to come up with other stuff!

Club America!



I used to watch soccer ALL the time. Its been years since I have sat down and watched.

Well, January 3rd it starts again!! Go Club America!!!
I am getting back into it all!

I used to watch all the time with Emma's father and his family. I cant wait to watch this season!

I love it. My mom wears it, and I have always snuck it and sprayed it on me.. Its so comforting.
It smells like a rose. Its not a sick smell either, its so light.

WTF LEAPSTERS ARE CHEAP!!

I bought a Leapster for Emma for Xmas. Well, We put batteries in it, and it didnt work!

I went out today and got new ones. It STILL won't work. I went online, and found 3042934 people with the SAME exact issue. So, here I bought Emma an EXPENSIVE toy, PLUS the games for this not to work. I am going to raise HELL.

If you are thinking about buying one of these- DONT!


Here is some info I found if you are having issues like I am :

Step1
Change the batteries. Sometimes this seems like a simple and obvious step, but is often overlooked. The Leapster console runs off of four AA batteries.

Step2
Hold the power button on the Leapster console. If you still do not see a display on the screen with a fresh set of batteries, then you got one of the bad consoles. This was a bad batch of consoles that were sent out by Leapster.

Step3
Gather information. Before you call Leapster customer support, there are a few pieces of information that they are going to want from you. These are place and date of purchase, your complete name, your mailing address, the serial number of your Leapster learning system (this can be found on the Leapster console, usually on a sticker or engraved onto the back on some models) and your Leapster model.

Step4
Contact Leapster customer support at (800) 701-5327. They should be able to replace your Leapster learning system free of charge. With all of your information ready, it should be quick and easy to get a replacement console.

Step5
Write down the RMA number given to you by the tech support person. This will be used by them as a reference point on your particular return. You will need to include this on the shipping label when you ship your console back to Leapster.

So I have been thinking about what I should be doing for New Years. I want to visit my friends, but Ashley, the person I want to see most will be working. So... I was thinking about going to Chicago, and celebrating the New Year with my sister.

My mom ordered me all the Twlight books for Xmas.. Well, I am ready for New Moon, and the two books got here, but the one I am ready for hasn't gotten here yet. I can't wait to start reading again!!

In rememberance of a beautiful three year old girl by the name of Caylee Marie Anthony.

She was such a sweet, loving, caring, and pretty child. She was just like a little angel.

I don't see how anyone could be so cold hearted to do something to such a sweet little girl.




What Happened?


Little Caylee has been missing since sometime back in June.
The police weren't notified of Caylee's disapperance until a whole MONTH later, after she had disappeared. Caylee's own mother [Casey Anthony] wasn't the one to call and confront the police. CASEY'S mother [Caylee's grandmother] called and notified the police saying that the mother has confirmed the disappearance of Caylee and the trunk of Casey's car smelt of a dead body. The police jumped on the case rather quickly and Casey was brought to jail with charges of first degree murder in October. Ever since then they've find so much evidence that the mother is the killer of little Caylee and STILL haven't sentenced her. But as of December 11th, they a meter reader got out of the his car to "relieve himself" in the woods and saw a trashbag. He kicked the trashbag and a human skull rolled out of it. Of course, he immediately contacted the police and the police came down there and recovered it. The findings of the bones were only fifteen houses away from the Anthony home. They've been studying and studying these bones for a little over a week now. And as of today, December 19, 2008, Caylee Marie Anthony is no longer alive. The skeleton found happened to be the remains of Little Caylee. And get this, that whole month that Caylee was "missing", her mother was out partying and dancing with friends as if nothing was wrong.

This mother deserves HELL for what she did to this little girl!

We got her cookbook, and starting New Years we are completely changing the way we eat. We will be monitoring our blood sugar levels and our blood pressure, etc. We want to eat healthy, and maintain a healthy weight/lifestyle.

All her foods are natural, packed with flavor, and GOOD FOR YOU!!! We love her!

Here are some of the recipes I want to try from her!

Chicken state with Spicy Peanut Dipping Sauce


Ingredients

  • 1/2 cup low-sodium chicken stock
  • 1/2 cup lite coconut milk
  • 2 tablespoons low-sodium soy sauce
  • 1 shallot, sliced thin
  • 1 clove garlic, minced
  • 1 1/2 teaspoons Thai fish sauce (or 2 additional teaspoons low sodium soy sauce)
  • 1 tablespoon brown sugar
  • 1/2 teaspoon lime zest
  • 1 tablespoon minced fresh ginger
  • 1 pound skinless, boneless chicken breast pounded slightly and cut into 1-inch strips

Directions

8 (8-inch) bamboo skewers, soaked for 20 minutes

  • 3/4 cup Spicy Peanut Dipping Sauce, recipe below
  • 2 tablespoons minced fresh basil or cilantro leaves
  • 1/4 cup chopped toasted peanuts

In a medium sized bowl, whisk together the chicken stock, coconut milk, soy sauce, shallot, garlic, fish sauce, brown sugar, lime zest, and ginger. Add the chicken strips and marinate for 1 hour. Remove the chicken from the marinade and discard the marinade.

Spray a nonstick grill pan with cooking spray and preheat over a medium-high flame. While pan is heating, thread chicken onto skewers. Grill 2 to 3 minutes per side, until meat is cooked through and has light grill marks.

Serve chicken skewers with Peanut Dipping Sauce, and garnish with basil or cilantro and chopped peanuts.

Yield: 4 servings (2 skewers and 2 tablespoons peanut sauce per serving)

Spicy Peanut Dipping Sauce:

  • 1/2 cup natural creamy peanut butter
  • 1/4 cup low-sodium chicken broth
  • 3 tablespoons low-sodium soy sauce
  • 1 1/2 tablespoons brown sugar
  • 1 1/2 tablespoons minced fresh ginger
  • 2 tablespoons lime juice
  • 1 teaspoon minced garlic
  • 1/2 teaspoon chili flakes
  • 1 teaspoon red curry paste
  • 1 shallot, peeled and roughly chopped

Place all ingredients in blender and blend until smooth.

Sauce can be made 1 day ahead of time, and will keep 3 to 4 days in the refrigerator.

Aromatic Noodles With Lime Peanut Sauce



Ingredients

  • 3/4 pound spinach linguine or whole-wheat spaghetti
  • 2 cups (about 9 ounces) broccoli florets
  • 2 cups (about 6 ounces) snow peas, trimmed
  • 2 cups (about 6 ounces) sugar snap peas, trimmed
  • 1/2 cup natural creamy peanut butter
  • 1/4 cup low-sodium soy sauce
  • 1/4 cup water
  • 2 tablespoons rice vinegar
  • 2 tablespoons fresh lime juice
  • 1 scallion, cut into pieces
  • 3/4 inch fresh ginger, finely grated
  • 2 tablespoons brown sugar
  • 1/4 teaspoon red pepper flakes
  • 1/2 cup shelled unsalted peanuts

Directions

Cook the pasta in a large pot of water according to the directions on the package. Drain and rinse with cold water. While the pasta is cooking put the broccoli in a steamer basket over a large pot of boiling water and steam it for 3 minutes. Add the snow peas and sugar snap peas and steam for 2 minutes more.

Toast the peanuts in a dry pan over a medium heat until they become fragrant, about 3 minutes. Set them aside to cool. Make the sauce by pureeing the peanut butter, soy sauce, water, vinegar, lime juice, scallion, ginger, sugar and red pepper flakes in a food processor or blender until smooth.

Right before serving, toss the pasta with 3/4 cup of the peanut sauce. Divide into 6 serving bowls and top each serving with the vegetables. Drizzle the remaining sauce over the vegetables. Coarsely chop the peanuts, sprinkle them on top and serve.

I haven't gone tanning since highschool. I have thought about it, and I have decided I wanted to start going again. I haven't gone in forever, and after being discouraged by a few people, I just pushed it under the rug.

I really want to go, it helps clear up my skin (which is super clear anyways right now thank you to proactive) and get bronzed. I don't want to be super dark, just a healthy looking tan. I feel like my body looks better tan. I plan on starting Monday.

Love.

At this point of my life I am completely happy to be single. I love going out, not worrying about a man. I love being with my friends and just doing whatever I feel like and not having to answer to anyone.

I was talking to a guy friend about this today. I am not giving up on love or completely canceling the possibility of something great to come along. Instead I have stopped looking for it- and am trying to grow as an individual alone. I feel like I deserve so much and I never want to take anything for granted. If something isn't working out, instead of dwelling on it, I just want to be happy. I don't want to waste my life wondering whether or not something is going to workout. If it is meant to workout, then it will. I want the marriage, the family, the unit, Everything. I have not found anyone in my life yet that I feel like, ok- this is completely it. I have wondered if it was, and I have hoped for it, but nothing has completely stung me in my ass yet.

Love isn't a maybe thing. Its powerful, and nothing can stop it.
So here's to the new year, going in single- and either way coming out of it HAPPY!

  • Get a job, get some things paid up- yes, I have managed to get myself into alittle debt grrrrr
  • Get a chunk of savings built up again
  • Get a job (the above can't happen otherwise lol)
  • MOVE. Finally make a move, figure out where I want to be and SETTLE DOWN!
  • Lose some weight! This is starting HARDCORE New Years Day.... so get ready!
  • Forget about the past already- Move on with my life.. be more open to relationships if something comes along...
  • Get more on a schedule. Wake up at a certain time, eat at certain times, go to bed on a certain time too. I want to work my day around a planned schedule, and not have so many days of doing "nothing"

Easy Bake Make it Yourself Cake Mixes

I bought Emma an Easy Bake for Christmas. Well, It only came with 2 packages of things to make. To buy the supplies is like 6-8 dollars per pack. RIP OFF!

So I went online and found cheap ways to make the EXACT same thing! I think I am going to put them in baggies and label them for Emma! If anyone has an easy bake, and wants to make their own recipes for cheap- here are some!

Angel Cookies Mix
6 teaspoons butter
3 teaspoons sugar
3 teaspoons brown sugar
1 pinch salt
1/4 c flour
1/8 tsp cream of tartar
1/8 tsp baking soda

Cream together Butter, Sugar and Salt. Add Flour, Cream Of Tartar, and Baking Soda. Bake 5 Minutes. Makes one dozen cookies.


Barbie's Pretty Pink Cake Mix
5 tablespoons Flour
1/4 teaspoon Baking Powder
1/8 teaspoon Salt
5 teaspoons Red Sugar Crystals
1/4 teaspoon Vanilla
4 teaspoons Vegetable Oil
8 teaspoons Milk

Stir together cake flour, baking powder, salt, red sugar,
vanilla, oil and milk until the batter is smooth and pink. Pour
3 Tbsp. of batter into greased and floured cake pan. Bake 15
mins. Repeat for second layer. Makes 2 layers.

Barbie's Sparkling Frosting Mix

4 teaspoons Vegetable Shortening
2/3 cup Powdered Sugar
1/4 teaspoon Vanilla
2 teaspoons Milk
Colored sugar crystals for decoration

In a small bowl, mix together shortening, powdered sugar,
vanilla and milk until smooth and creamy. Spread 2 tsp. of
frosting on top of 1st layer. Add 2nd layer and continue
frosting. Sprinkle with colored crystal sugars.

Frosts a 2 layer cake.

Easy Bake Oven Brownies
2-1/2 Tablespoons sugar
2-1/2 Tablespoons flour
1 teaspoon oil
1/8 teaspoon vanilla extract
4 teaspoons chocolate syrup
1 tablespoon cocoa powder

Blend all ingredients until the batter is smooth. Pour batter into
greased and floured toy cake pan. Bake as directed in child oven.

Exhausted

With going out with my friends all week, Christmas, and driving home- I can honestly say I am physically, emotionally, and mentally drained. lol

I'm glad for things to get back to normal. I really hope to go back to see my friends soon! I have alot of things on my mind, and I think this trip has made a huge impact on some of the things I have been pondering about.

I miss my friends so much, it HURTS. For real... the pain is so strong :(
